Waiting until your heart drops to drink is related to your sympathetic and parasympathetic nervous system, when your heart rate is elevated (sympathetic) your body will make it very difficult to swallow water because your parasympathetic nervous system is not activated, eg. could vomit or aspirate. And its also pretty uncomfortable to do this! Scientific reason for breathing in through the nose is that this action expands your lungs and lower airways (alveoli) which is where gas exchange occurs so you can breathe in more oxygen whuch you need after depleting your aerobic stores and to breathe out CO2 which you have produced in excess from exercising and increasing your metabolism and therefore metabolic waste. Putting your arms up also helps expand your lower airways which once again is so you can increase your ventilation and gas exchange. So yes there is scientific research and reasons related to physiology as to why we do these.
